- 4 pre-made falafel
- 2 tablespoons hommus or baba ganoush
- 60g rocket or baby spinach leaves
- ½ punnet cherry tomatoes, cut in half
- ½ red onion, remove end and papery skin, slice thinly
- ½ Lebanese cucumber, cut in half lengthways and then slice into half moon shapes
- 2 teaspoons olive oil
- ½ lemon, juiced
