Ingredients
It’s this easy
- With a fork, poke holes in the skin of the potato
- Place in a small bowl, covered with a wet paper towel. Microwave for 6-7 minutes
- Once cool enough to touch, rub olive oil & garlic powder over the potato
- Wrap with baking paper, and air fry at 200 for 20 minutes
- Cut the potato open by making 2 intersecting cuts in a cross formation, cutting about halfway down so that the potato can be opened. Top with your favourite fillings - we love homemade baked beans!
Tweaks
To mix things up try with sweet potato. If it’s larger than a medium potato, add an extra two to three minutes in the microwave, and 5-10 minutes in the air fryer.
Jacket potatoes are the perfect way to use up leftovers like Savoury Mince, Roast Chicken or Dr Karl’s Bolognaise
Short on time later? Why not microwave extra potatoes now and air fry later when you need a meal or snack fast. Microwaved potatoes can be stored for 3-4 days in the fridge. Future you will thank you!
