  • 1 kg mixed dried fruit

  • 3 earl grey tea bags

  • 2.5 cups boiling water

  • 1 tsp mixed spice

  • 1 cup wholemeal self raising flour

  • 1 cup white self raising flour

It’s this easy

  • In a large bowl, add boiling water and earl grey tea bags. Allow to steep for 10 minutes. Remove tea bags

  • Add mixed dried fruit to the tea. Mix, and ensure fruit is covered with liquid. Cover and place in the fridge overnight

  • Remove the dried fruit/tea mixture from the fridge, and preheat your oven to 160C

  • Grease a large square cake tin, and line with baking paper.

  • Add both of the flours, and the mixed spice into the mixed fruit/tea and stir until well combined

  • Pour cake into the lined cake tin, and bake in the preheated oven for 50 minutes, until the centre of the cake springs back and a skewer comes out clean


  • This recipe will work with just the fruit, flour and liquid. You can get creative and try different liquids and spice combinations or just stick with the most basic recipe
