1 kg mixed dried fruit
3 earl grey tea bags
2.5 cups boiling water
1 tsp mixed spice
1 cup wholemeal self raising flour
1 cup white self raising flour
Christmas cake without the fuss
In a large bowl, add boiling water and earl grey tea bags. Allow to steep for 10 minutes. Remove tea bags
Add mixed dried fruit to the tea. Mix, and ensure fruit is covered with liquid. Cover and place in the fridge overnight
Remove the dried fruit/tea mixture from the fridge, and preheat your oven to 160C
Grease a large square cake tin, and line with baking paper.
Add both of the flours, and the mixed spice into the mixed fruit/tea and stir until well combined
Pour cake into the lined cake tin, and bake in the preheated oven for 50 minutes, until the centre of the cake springs back and a skewer comes out clean
This recipe will work with just the fruit, flour and liquid. You can get creative and try different liquids and spice combinations or just stick with the most basic recipe
