- 250g chicken mince
- 100g cauliflower rice
- 75g feta cheese
- 2 eggs
- 1/3 cup breadcrumbs

- Herbs to taste – use whatever you have on hand – dried dill, onion powder, mint, rosemary etc.

1. Combine all ingredients in a bowl, mix well until combined.
2. Roll out into balls, using a spoon or ¼ cup to ensure even portions.
3. Set airfryer to 180˚C, and cook meatballs for 8 minutes, shake, and then cook for another two minutes, or until golden brown.
4. Serve with your favourite sides!
Tweaks
Use frozen spinach if you don’t have any fresh spinach – just as tasty, but may require defrosting if frozen as cubes.
