- 300g tofu, sliced
- 1 brown onion, remove ends and papery skin then chopped
- 1 tablespoon ground cumin
- ½ teaspoon dried chilli flakes
- 400g can diced tomatoes
- 6 corn tortillas
- 60g rocket leaves
- ½ bunch coriander
- Lime wedge
These will be on the table before you can say tofu taco!
