Caramelised Mushroom and Spinach Pizza

Caramelised Mushroom and Spinach Pizza

Serves = 2

  • 2 wholemeal Lebanese wraps
  • ½ cup passata
  • 2 tsp EVOO
  • 10 button mushrooms
  • 1 brown onion
  • 2 cloves garlic
  • 1 cup frozen chopped spinach
  • ¼ cup pine nuts

It’s this easy

  • Preheat oven to 220°C
  • Finely slice brown onion, garlic and mushrooms
  • In a large fry pan on medium heat, add olive oil, onion and garlic. Cook for ~2 minutes until onion begins to soften.
  • Add mushrooms to pan. Continue to cook for a further 5 minutes then add the frozen spinach portions.
  • Continue to cook on medium heat until the mushrooms have softened and the moisture has cooked out from the pan. Set aside.
  • Place Lebanese wraps on baking trays. Evenly spread passata onto base then top with mushroom and spinach mixture. Sprinkle pine nuts over the top
  • Bake in oven for 10-12 minutes.

Tweaks

  • Make into a quick snack on a sandwich press by halving the toppings and folding the wrap over in the middle!
  • Sprinkle on some nutritional yeast at the end for a little extra umami
