1 cup plain wholemeal flour
1 ¼ cup rolled oats
½ cup sugar
½ cup desiccated coconut
125g olive oil spread
1 tbsp honey
2 tbsp boiling water
½ tsp bicarbonate soda
A slightly healthier take on mum's classic ANZAC biccy
Preheat oven to 180*C and line a baking tray with baking paper.
Combine flour, oats, sugar, and coconut in a bowl
In a separate microwave safe bowl, place butter and honey. Microwave for 30 sec increments until melted. Mix together. To the butter and honey, add boiling water and bicarb soda.
Add the butter mixture to the dry ingredients and mix together.
Roll into balls (about 1-2 tbsp per ball)
Arrange evenly on your lined baking tray, leaving 1-2 inches between each ball.
Bake for 15 minutes, or until golden brown in colour.
Let biscuits cool on the tray for 5-10 minutes.
You can substitute honey for golden syrup.
