Baked Carrots with Honey & Thyme

Ingredients

Serves = 4

  • 8 medium carrots
  • 1 tbsn honey
  • 3 tsp thyme (fresh or dried)

It’s this easy

  • Pre-heat oven to 170 degrees and line a baking tray with baking paper
  • Top and tail the carrots and slice lengthways into quarters
  • Spread the sliced carrots out on the baking tray, drizzle over the honey and sprinkle on the thyme
  • Bake for approx. 40 minutes or until carrots are cooked through

Tweaks

  • Can also include other vegetables e.g. potato, pumpkin and capsicum
