Nectarine and green bean salad

Nectarine and green bean salad


Serves = 3

2 medium white nectarines, sliced into wedges

240g green beans, top and tailed

2tbsp slivered almonds

½ red onion, sliced


2tsp extra virgin olive oil

2tsp balsamic vinegar

1tsp lemon juice

It’s this easy

  • Put a fry pan on medium heat and add the slivered almonds to dry cook (i.e. no oil) for approx. 2 minutes. Make sure to stir frequently to prevent burning. Once golden brown, remove from pan and place aside for later
  • In the same pan, dry cook the green beans on a high heat for 3 minutes. Remove from heat and place in large salad bowl
  • Next, fry the red onion in a light drizzle of olive oil on medium heat until caramelised
  • Add onion, almonds and nectarines to the bowl with the green beans
  • For the dressing, combine olive oil, balsamic vinegar and lemon juice in a small bowl
  • Pour dressing over salad and serve


  • Try peaches instead of nectarines
