Colourful Beetroot, Goats Cheese and Walnut Salad

A quick and easy salad that is ready in minutes! Super simple but packed with flavour, this beetroot salad is perfect all year round!

Colourful Beetroot, Goats Cheese and Walnut Salad


Serves = 4

  • 425g can diced beetroot, drain off liquid
  • 1/3 cup walnuts, roughly chopped
  • 1 medium red onion, remove ends and papery skin then finely slice
  • 1 Lebanese cucumber, diced
  • 120g baby spinach or rocket leaves
  • 2 tbsn extra virgin olive oil
  • 3 tbsn lemon juice
  • 1 tsp lemon zest
  • 60g goats cheese
  • 1 medium navel orange, skin removed and cut into eighths

It’s this easy

  • Add oil, lemon juice and zest into a small bowl and mix well until combined
  • In a large bowl combine beetroot, onion, cucumber, spinach, orange and dressing and toss gently until combined
  • Crumble the goats cheese and walnuts over the salad


  • Whisk some Dijon mustard into the lemon and olive oil dressing for an extra bite
  • Roast the walnuts to give the salad a deeper flavour
