Mushroom & Goats Cheese Pasta Salad

Ingredients

Serves = 4

  • 250g dried pasta (any shape)
  • 2 tsp extra virgin olive oil
  • 350g mushrooms, sliced
  • Half a bunch of kale, remove stems and chop
  • 125g cherry tomatoes, sliced in half
  • 60g goats cheese

It’s this easy

  • Bring a pot of water to the boil and add in the pasta to cook for 8-10 minutes or until cooked
  • Heat the olive oil in a frying pan over medium-high heat and add the mushrooms and kale to cook for 5-7 minutes or until the mushrooms are browned and kale is crispy
  • Add the tomatoes to the frying pan to warm through
  • Drain the water from the pasta and transfer the vegetables from the frying pan to the pot. Add in the goats cheese and stir well to combine

Tweaks

  • Serve with a squeeze or lemon or lime juice
