Portuguese Style Rice

Portuguese Style Rice

Ingredients

  • 1 tablespoon extra virgin olive oil
  • ½ onion, diced
  • 1 tablespoon minced garlic
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 cup brown rice
  • 2 cups water
  • 1 chicken stock cube
  • ½ cup frozen peas
  • ½ cup frozen corn
  • 1/2 capsicum, diced

It’s this easy

  1. In a large pot, heat oil over medium heat,
  2. Once warm, fry minced garlic and onion, stirring occasionally until the onion softens
  3. Add spices, and stir until combined
  4. Add water, rice and chicken stock, and bring to boil
  5. Once boiled, turn the heat to low and add vegetables.
  6. Let simmer with lid on, for 20-30 minutes until the rice has absorbed all the liquid, stirring occasionally.
  7. Once completely cooked, serve with meat marinated in our Smokey Spice Rub, and a Side of Greens.

Tweaks

  • Add any extra veggies you have on hand – zucchini, beans, or mushrooms.
  • This recipe freezes well! Double the batch, and freeze half for another time.
