- 1 tablespoon extra virgin olive oil

- In a large pot, heat oil over medium heat,
- Once warm, fry minced garlic and onion, stirring occasionally until the onion softens
- Add spices, and stir until combined
- Add water, rice and chicken stock, and bring to boil
- Once boiled, turn the heat to low and add vegetables.
- Let simmer with lid on, for 20-30 minutes until the rice has absorbed all the liquid, stirring occasionally.
- Once completely cooked, serve with meat marinated in our Smokey Spice Rub, and a Side of Greens.
Tweaks
- Add any extra veggies you have on hand – zucchini, beans, or mushrooms.
- This recipe freezes well! Double the batch, and freeze half for another time.
