- 1 bunch asparagus
- ½ cup grated parmesan
- ¼ cup almonds
- ½ bunch flat-leaf parsley
- ¾ cup olive oil
Only taking five minutes to prepare, this pesto will make a great addition to any meal or snack.
It’s this easy
- Cut the woody ends off the asparagus. Place in a heatproof dish and add enough boiling water to cover the asparagus, allow to stand for about 3 minute then drain off the water.
- In a food processor or stick blender jug add the asparagus, parmesan, almonds and parsley.
- Finely chop then add the oil in a slow with the motor running and process until smooth.
