Carrot and apple coleslaw with mustard vinaigrette

Carrot and apple coleslaw with mustard vinaigrette

Serves = 4

  • 1/2 cabbage
  • 1 carrot
  • 1 red apple
  • 4 tbsn extra virgin olive oil
  • 2 tbsn sherry vinegar
  • 1 tbsn Dijon mustard

It’s this easy

  • Slice or shred the cabbage into thin strips, thinly 'shave' the carrot with a vegetable peeler, and cut the apple into thin slices (leave the skin on), and combine these in a bowl
  • In a separate small bowl add the olive oil, sherry vinegar and mustard and stir well to combine (or place in a jar with a lid and shake to combine)
  • Pour the vinaigrette over the salad and toss through


  • Try half red and half white cabbage for a colourful coleslaw
