- 4 wholemeal pita breads
- 4 tbsn tomato paste (salt reduced)
- 1 small eggplant, sliced
- 2 medium zucchini, sliced into rounds
- 1 red capsicum, seeds removed, cut into small pieces
- 2 medium carrot, grated
- 1 punnet cherry tomatoes, sliced into halves
- 1 cup cottage cheese
