½ lime, juice and zest
1 Tbsp coriander leaves, chopped
1 tsp ginger
1 tsp Extra virgin olive oil
A light flavoured marinade perfect for fish
Mix all ingredients together with extra virgin olive oil, and rub into the fish.
Allow to marinate for 10 mins
Grill, fry or steam fish
