Mexican Minced Beef Wraps

These tasty Mexican inspired wraps are quick and easy to put together. A great way to use your leftover mince!

Mexican Minced Beef Wraps


Serves = 2

  • 2 x 45g wholegrain tortillas
  • 2/3 cup cooked lean beef mince
  • 1 cup mixed lettuce leaves
  • 1 carrot, grated
  • 1/2 red capsicum, core and seeds removed then flesh chopped into strips
  • 1 tomato, diced
  • ¼ cup light tasty cheese, shredded
  • 2 tbsn natural Greek or natural yoghurt (reduced fat)
  • 1 tsp Mexican spice mix

It’s this easy

  • Place the Greek yoghurt and Mexican spice into a small bowl, mix until combined
  • Lay out tortillas on a plate or chopping board and evenly spread the yoghurt mixture on each tortilla
  • Top each tortilla with half of the cooked mince, cheese, lettuce, carrot, tomato and capsicum
  • Roll up tightly to enclose


  • For a vegetarian wrap use canned lentils, kidney beans or black beans instead of the beef mince
  • Add extra salads such as cucumber, corn, avocado and red onion
  • For some extra flavour add some paprika, cumin or mixed herbs to the cooked beef mince
  • Add to sandwich press and toast for 2-4 minutes for a warm wrap with melted cheese!
