Sandwich Press Chicken Pesto Pizza

Sandwich Press Chicken Pesto Pizza

Ingredients

Serves = 4

  • 1 wholemeal wrap or piece of Lebanese bread
  • 2 tablespoons pesto
  • ½ cup lightly packed grated mozzarella
  • 1 small zucchini sliced
  • ¼ punnet cherry tomatoes, cut in half
  • Handful cooked chicken, without skin
  • Handful of baby spinach
  • ¼ lemon, juiced
  • ½ teaspoon extra virgin olive oil

It’s this easy

  • Heat up the sandwich press
  • Spread the bread with pesto
  • Top with half of the mozarella, then add the zucchini, chicken and cherry tomatoes. Top the vegetables with the remaining mozzarella
  • Place on the sandwich press, lower the top down so that it sits just above the toppings. Cook for around 4 minutes until all the cheese has melted and the base is crisping up
  • While the pizza is cooking gently mix together the spinach, lemon and olive oil
  • Place the pizza on a chopping board, top with the spinach and cut into pieces

Tweaks

  • Add some dollops of ricotta to the pizza for creamy bursts. For some extra lemony flavour try adding some grated lemon zest to the dressing.
