Quick Mexican street corn

Quick Mexican street corn


Serves = 4

  • 12 frozen corn cobs (one whole bag) or 4 ears of fresh corn
  • ¼ cup mayonnaise (low fat)
  • 1 lime, juiced, use only ½ a lime if they are very juicy
  • Chilli powder

It’s this easy

  • In a bowl combine the mayonnaise, lime and chilli powder and mix well.
  • Cook the corn in the microwave on high heat for 3 minutes, move the corn around so that they warm up evenly and put back in the microwave for 2 or 3 more minutes until the corn is hot.
  • Using a pastry brush or butter knife spread the mayonnaise evenly over each corn cob.


  • By selecting the right mayonnaise this recipe could be vegan, gluten free, soy free or milk free as needed
